- 1 Zucchini
- 1 Yellow Squash
- 1 Onion
- 3+ cups Tomatoes ( any variety of tomato works well, but we prefer the little red cherry varieties)
- Italian Seasoning
- 1-2 cups Smokehouse Red
- Salt and Pepper
- The peak of summer sees all kinds of wonderful vegetables that work really well when you keep the cooking basic. This simple red wine marinate can be used in as little as 20 minutes before you start grilling or as early as two hours before depending on your needs.
- Chop vegetables and place them into a bowl or resealable bag. Add wine and seasonings to taste. Place in the fridge and marinate for at least 20 minutes. Cook on medium heat on the grill for 20-30 minutes, on an aluminum baking sheet.
- Stir the vegetables so that you get an even cook on them and the ones on the bottom don't burn. When the zucchini is cooked through the rest of the vegetables will be ready. Enjoy!
