Our fermentations rely on indigenous yeasts and we do not use fining additives or adjustments.

Ideal Site

Located on the Eastern slopes of Seneca Lake, the site is not only visually stunning but also ideal vineyard land. Factors such as proximity to the lake, slope, and soil type are vital components that contribute to moderating lake effects and ripening, and contribute to the distinct nature of our wines.

Our friend Chef Conny Andersson created this recipe to pair with our Standing Stone Blanc de Blanc, and it has been an immediate favorite: Serrano Ham Chips with Piquillo Pepper Pimento Cheese Dip.

Crispy, paper-thin ham chips alongside a house-made dip of roasted piquillo peppers, aged cheddar, and sherry vinegar, alongside the rich, yet bright, fine mousse of the 2020 vintage of our Standing Stone Blanc de Blanc.

The secret behind the color? Saperavi is one of the rare grapes where pigment runs through the pulp itself therefore no skin contact is needed. That same depth carries into the glass, with ripe cherry, a lift of lime zest, and enough structure to stand up to whatever you're grilling this spring.

Our Partner Winery

Hermann J. Wiemer Vineyard, founded in 1979, is located on the western slopes of Seneca Lake. In 2007, Hermann sold the winery to Fred and Maressa Merwarth, and Oskar Bynke.
